Mini Jacket Potatoes

I came up with this idea by accident as my wife and I forgot to order large potatoes to make jackets with. In the fridge was a packet of baby potatoes so I thought I'd give them a try. We only really have the time for long cooks at the weekends so the microwave is our midweek friend. This recipe can be done on a kamado style barbeque or directly over the coals.

Feeds - family of four with some leftovers

Time - 30 minutes with a microwave, 1 hour without a microwave

Ingredients

A bag of baby potatoes

Butter

Salt

Set the kamado to around 200C (395F) or light the barbeque.

If you have the time, toss the potatoes in a small amont of oil and place on the bbq.

If you dont have the time, microwave the potatoes in a microwavable bowl for 7-10 minutes then toss them in a small amount of oil. Add them to the bbq.

Turn them frequently to stop them burning. Baste them with melted butter and salt every so often to get the skins really crispy.

Cook until they are crispy on the outside and soft in the middle.
