Bean salad

No BBQ needed for this one, but it goes great with so many meals cooked on a BBQ. Its really quick and can be made whilst a big piece of meat is resting. You can cook the corn on a kamado or grill. This would also be good as a meal on its own with some rice.

Ingredients

Mixed beans, pre cooked and cooled

A large pepper

Two large tomatoes, finely choppped

A Red onion finely chopped

Two corn on the cobs

Red cider vinegar

Butter

Method

Cover the seetcorn with butter and cook the corn on your preferred BBQ, turning often to stop it burning

Combine the beans, pepper, tomatoes, onion and vinegar in a bowl

Once the sweetcorn is cooked, cut the corn from the cob and add to the bowl

Serve
