Tomahawk steak

This is a must try for anyone who likes to cook on a BBQ. There aren't many things more impressive that a big slab of meat on the bone. I like to revese sear my big red meat steaks - I find it keeps the meat tender and the whole family eats it, regardless of steak preference.

Feeds - two adults as part of a meal or one hungry adult

Time - 5 min prep, 1 hour cook

Ingredients

A Tomahawk or cowboy steak

A strong rub, like The Smokey Carters 'Ancho Coffee' rub

Set the kamado for indirect cooking and get up to around 200F.

Cover the steak in the rub, or just a bit of salt and pepper if you prefer.

Place on the grill and cook for 45 mins, turning over half way.

Take the steak off and rest for 5-10 mins. During the resting, take off the heat deflector and get the heat up to 450-500F.

Sear the steak for 1 minute each side directly over the coals.
