Chicken Bites Wrapped in Bacon

I came up with this recipe as I had started to build up a fair stock of BBQ rubs in my cupboard, I'm sure a lot of people are the same. So it's a great way to make some room for new ones. Once again a simple recipe which can be cooked during the week or for a quick lunch.

Feeds - Family of four

Time - 15 minutes prep, 20 minute cook

Ingredients

3 Chicken breasts diced into equal pieces

Bacon or streaky bacon if you'd prefer

Any type of rub you like or have in the back of the cupboard that needs using up

Equipment

Toothpicks or metal skewers

Food bag or ziplock bag

Clingfilm

Method

Put the pieces of chicken into a foodbag (ziplock bag) along with the rub you are using. Seal the bag and shake until the chicken is covered

Lay the bacon in single slices on a chopping board and cover in clingfilm. Lightly roll with a rolling pin, this will make it go a bit further

Cut the bacon so it is the same width as the chicken pieces and wrap the chicken with it

Overlap the ends of the bacon and push a toothpick through it to hold it in place whilst cooking

Cook until the internal tempreature is 75C or 165F
