Sausage with Black Olives in Tomato sauce

This meal can be cooked on it's own as a stew, or with rice or pasta but our favourite is gnocci. A nice warming dish for a rainy day which can be made in volume for lunches or frozen for another day. Use your favourite sausages and add some chilli flakes if you like the heat. This can be cooked on most types of BBQ as the ingredients are cooked within the dutch oven

Time - 15 minutes prep, 1 1/2 hour cook

Ingredients

6-8 Sausages

Tin of chopped tomatoes

Vegetable stock

Pitted black olives, sliced

An onion finely diced

Oregano

olive oil

Equipment

Dutch oven

Light the BBQ

When the charcoal or wood is ready for cooking put the dutch oven on the heat and add a little oil

Once the oil is hot, add the onion and cook until soft.

I like to cook the sausages next to the dutch oven on the grill. If you don't have the space they can be cut up and cooked with the onions.

Add the tomatoes, olives, stock and oregano to the pot and stir occasionally to stop it catching on the bottom

When the sausages are cooked cut them up and also add them to the pot.

Let it simmer for 10 minutes and serve
